I would agree with Linz on the zucchini risotto, also, what about french cut string beans? Because most of the "bean" part of the green bean falls out when they are french cut, these are much safer for me than regular green beans! Also, I wouldn't advise this too strongly because I know it's a big no-no for lots of people, but I can eat canned corn in small doses with bread or potatos, or some other soluable. Take that one on your own advisement though. Good luck!
