Deli chicken and turkey should be just fine. I just had some today with no problems, actually. I'd be careful with the lettuce... maybe try a little for the first time sometime when you can risk an attack. I wouldn't put lettuce on my sandwich, but that's just me - you might tolerate it just fine.

Fat free mayo is pretty nasty, agreed. Hellmann's Just 2 Good low-fat mayo, however, tastes just like regular mayo to me. Or do my favorite: mustard! I never eat turkey with mayo anymore; honey mustard is just too darn good.

Or a little bbq sauce with smoked turkey on a good roll... mmmm....

As for the nuts, I don't know. I'd go easy on those; they're pretty high in fat. If you try some, be sure to have some soluble fiber first, to cushion things.
