Rice noodles should be fine. Just look at the back of the package, and see what the fat content is - I've never seen one that wasn't labeled with that information. Most noodles are just flour (be it wheat, rice, corn, etc) and water and are perfectly safe.
I probably would still eat the supermarket ramen, if it wasn't for the fact that I LOVE ramen and will probably start eating them every day again, now that I found a good one. (It's a good thing I don't have to worry about my sodium intake, hehe.) As an occasional "treat" sort of food, they might be still ok for you, esp. if you're choosing one of the lower-fat flavors. I just know that my favorite kind (creamy chicken flavor) is like 13g of fat, and I seriously don't eat that much fat in a DAY now.
