New - how long does it usually take?

Hi all, I've been lurking for a while and recently bought the IBS cookbook, Acacia fiber, and peppermint capsules. I've been following the IBS diet for a week now, and haven't seen any decrease in bloating/gas or any change in bowel habits.

How long does it usually take to start seeing any improvement?

I've been sticking to white rices, Lemon Dreamy rice pudding (yum!), corn and rice based cereals, etc. I drink lots and lots of water, and have replaced my old love, coffee, with peppermint tea. (The peppermint tea has helped with the gas and bloating slightly, thank goodness!) I've been taking the Acacia and the peppermint capsules as instructed.

Even eating just a few, slow bites of "safe" foods already causes me to feel bloated, uncomfortable, and full.

My stools remain difficult to pass, and when they do, they are generally small and pellety, or hard and sticky/mucousy. Usually I can only get a small bit out at a time. Bentyl is no longer working.

My first appointment with a GI specialist isn't for another month, and I'm going crazy! Any advice would be very much appreciated.
