I have a great recipe for vegan muffins made w/whole wheat pastry flour which is much lighter than whole wheat flour used in bread. Before we went GF I used it all the time, but have not for several months, using Bob's Red Mill GF baking mix instead. Today I made some muffins for friends w/no gluten issues and made it with the ww pastry flour. I sampled one muffin, ate it slowly, not on an empty stomach, etc....w/in 15 minutes I started feeling crummy in my belly. I immediately ate some banana and half a rice cake and was okay. I think that's enough research for me!!!

I'm still amazed by this - I have been eating whole wheat flour products for over 10 years thinking it was something really good for me.
