Hi, Erilyn... well, I can't tolerate soy very well, and my sister urges me not to eat it... some scare about causing breast cancer in women who haven't been pregnant? or some such thing. I know a lot of sites debunk that, but I just don't know.
Now today, I did pretty well with my first meal. I had a poached chicken breast, a few limas, and a yogurt, and haven't had a rumble. It's now time for the second meal, and I'm stumped as to what to eat. I find that I *do* need a bit of insoluble fiber, or things don't move the way they should, so maybe I'll have organic lentil soup.
I was running low on Stevia, so I went to buy some tonite and discovered a new variation... Stevia with Inulin Fiber, which I've read is considered safe for diabetics (I am pre-diabetic). It's even harder to figure out what to eat, when a person has to deal with both diabetes and IBS, which seem to be pretty mutally exclusive, diet-wise.
All in all? I am about as frustrated and depressed as a person can get. Nothing in my body seems to work right! Have to say, I'm with the others who say they want to give up. Eating like this isn't living, but... I guess there's no alternative.
