Best Birthday EVER! Thank you Heather! (kinda long)

I've been on the diet for over a yr now & I've been hesitant to say I'm stable, don't want to jinx it! But I think I really am finally stable! My IBS is mostly under control, my endometriosis is starting to get better, I feel great! Thank you SO much, Heather! And thanks to those of you who have helped me along the way. (I would love to mention all of you by name, but I'm afraid I might forget someone.)

My b-day is actually tomorrow, but since I have to work, my BF did everything today. We had to go to the car dealership b/c he was in an accident last week & the insurance comp totaled his car. So we have to get a new one, had to go do the test drive, sign the papers, all that stuff. I thought we were just going to go home after that. But he took me out to lunch at a Japanese restaurant, and then to the Godiva chocolate store -heaven!- where he bought me a huge box of mixed chocolates (I got to pick what I wanted--I felt sorry for the lady behind the counter, but hey, it's my b-day)! THEN!!! He took me to my favorite Thai place for dinner tonight! Can I have my b-day EVERY day?

So, for those of you who think you can't live w/IBS, think again! You can have a decent life & enjoy food! I had the best food today and all of it was IBS safe--I had chicken w/noodles & steamed veggies at the Japanese place, then Thai sweet & sour chicken w/fresh veggies & rice at the Thai place. The same meat, but vastly different tastes. And lightly cooked mango w/sweet sticky rice for dessert-OMG-YUM! Now, don't run out & eat a bunch of raw veggies on my account. I lean more toward the C side & need more IF than some can safely handle. And it's taken me a while to get where I am. But it CAN be done. Sand, your post was right on target, IBS-safe food doesn't have to be boring. We're not doomed to a life of bland chicken & rice. It just takes time, patience, & effort. Again, Heather, thank you for this diet & website! I had a wonderful birthday, thanks in big part to you & the others on the boards!

...oh by the way, that big box of chocolates? I'm going to try my best to eat only 1 piece a day, but we'll see!
