I have vacationed in Mexico. What I did to ensure that I would have a mostly non-IBS week was to rent a home that came with a cook, get a good translation dictionary, and request that my meals were made with no dairy, bread, and a spinach salad that I could eat at the end of my meal. It worked great, the cook was so understanding when I consistently reiterated "no leche", and I made sure that the owner of the home I was renting from understood some of my food limitations so that it could be given to the staff in advance. I had minimal IBS issues and had a wonderful time. With China, I would think you would be mostly worried about the IF since they eat so many vegetables. Personally, I would be sure to get plenty of rice prior to the meal and ensure that the veggies are cooked well before eating them. Good luck!!
