Gas and IBS-D plus a fiber question

For the last 5 months, I've been taking 22.5 grams a day of Acacia fiber and was absolutely fine until I went to a chinese restaurant three weeks ago and had a bad D-attack right after (think there was some vegetable oil mixed up with the soy sauce).

Since then, I've been struggling with my IBS and having a D-attack once a week. There is a pattern: all attack are in the mornings and I always have many specificly badly scented (like fermentation)gas the night before the attacks. On the last attack, I took a Chewable Immodium 48 hours before the attack, I realized it contains SORBITOL.

Two questions: Am I taking too much Acacia and should lower my dosage?

Could SORBITOL cause an attack 48 hours after taking it?
