Sugar really doesn't have all that many calories. Personally, I use it only in baking and occasionally in recipes with lots of tomatoes. Most of the low-fat baking recipes call for WAY more sugar than they need, IMO, so like another poster said, I often use less than called for. As a general rule for experimenting, try using about 75% of what the recipe calls for. If that works, you can try going down to 50% and see how it turns out.
