Well, three years old is old enough to understand that certain foods are "safe" and "unsafe". I would include him in shopping for foods that he can eat and planning meals so he feels as if he has some control. This way he will be less likely to eat "unsafe" foods when you aren't there.

A nutritionist is a great idea. Your son is too young to risk his not getting proper nutrients. As for the amount of acacia, I cannot help you. I don't know the recommended daily fiber intake for children. I do know from my own experience, that if you find a dose where he is stable, then stick with it. Don't worry about working up to a higher level unless symptoms begin to recur.
