Correct me if I'm wrong here, but I think everyone's definition of stable is a little different. I have followed the diet for years and am doing much better. I consider myself stable, and can eat cheeses in moderation and chocolate and such, but I still have attacks occasionally, or at least urgency to go. But, point is, it's under control and I'm functioning well and I don't eat crappy food when I know I'll be away from a bathroom, etc.

I think you'll know when you get to a place where you're stable and can trust that you can handle that bowl of mac and cheese or whatever your vice is.
