I decided to try to make the "cereal yogurt bars" that I found somewhere on this message board. Easy steps and basic ingredients, however, mine didn't quite turn out like "bars"...they are mushy! They do taste good but the consistency is sort of like...oatmeal! Gosh...has anyone else tried this recipe? What did I do wrong??
Cereal Yogurt Bars
2 cups cereal ( rice krispies, corn flakes or your choice of safe cereal) 3/4 cups plus 2 tablespoons diveded flour 1/4 cup brown sugar 1/2 tsp cinnamon 1/2 cup unsalted margarine ( or your substitute) 1 8oz container of soy yogurt any flavor (or use your IBs safe yogurt) 1 egg ( 1/4 cup egg beater)slightly beaten
Heat oven 350. spray 8 inch square baking pan with no stick cooking spray. mix cereal, 3/4 cup flour,sugar and cinnamon in a small bowl. Cut margarine until mixture resembles coarse crumbs. Press 1/2 of the mixture in bottom of prepared pan. Mix yogurt, egg and remaining 2 tablespoons of flour in another small bowl. Spread over cereal mixture in pan, sprinkle with remaining cereal mixture. Bake for 30 minutes or until golden brown. Cool in pan on wire rack. Cut into bars. makes 16 bars.
