Cornmeal allowed?

Cornmeal is mentioned as a safe ingredient- is this b/c corn is insoluble fiber on the outside and soluble on the inside and this form minimizes the insol and maximizes the sol? I am dying to make polenta.
Also, I too am trying to increase whole grains, but am a little hesitant. Figure I will try a little with regular white rice to be safe. What is the consensus on brown rice, quionoa, barley, etc. Everything gives me gas and then the cycle begins. I have trouble eating soy, eggs b/c of this same problem.
