Newbie questions

Hey all, I'm new to IBS (relatively - I've had it for a year now), so it's still a bit mystifying. Among my millions of questions, here are the two latest:
1. I've always had IBS-C and really not that bad. Generally I tried to be good and mostly ignored it (no red meat, but still dairy - that kind of thing). However: Last weekend (2/19) I was really bad and had fried food with cake for dessert. To my horror, I woke up the next morning with diarrhea. Which I'd never had. So - I was ultra careful for a week, which for me meant only veggie soup, high-fiber bread and no fats. That seemed to work, and by Friday (4 days ago) I was feeling pretty peachy. So I ordered veg se ew (isn't Thai supposed to be safe?). It tasted great, but the next morning I was all bloated and gassy. So, trying to be good, I had a Clif bar for fiber (more on those later). Sunday night I made ginger/cilantro/basil chicken (yeuch. bad recipe) with peas and carrots. Yesterday morning, diarrhea again. So, yesterday and today I've stuck exclusively to Heather's safe foods (lots of rice and angel cake) and I'm feeling better. But, finally my question: Do you think this means I'm actually IBS-A and the diarrhea thing is going to stick around, or is it just related to the nasty ginger chicken and I'll go back to being C? I'd really actually prefer that. And, does anybody know if there's a set time that people who have A usually have one or the other? Is it a if it alternates frequently (like monthly), or can it be something yearly?
2. Clif bars. I know that a lot of people on the boards here eat Luna bars; I happen to really like Clif bars (made by the same people). Are they safe too?
