To what extremes in avoiding dairy?

Hola! I am new to the board, new to the diet, and newly diagnosed (though I figured as much). The diet did wonders the first two weeks after starting with herbal teas, soluble fiber supplements, and soluble foods. Then it has gone back to problems. I am on Zelnorm and had decreased it to one a day-now going back to two. I am basically IBS-C with some alterations with D. Any comment on this would be great. But my real issue is that I am going to quit coffee and dairy. But to what extremes do you think I should take these changes. Should I cut out tea as well or is green tea with caffiene reasonable. The dairy is the real concern, I can cut out obvious dairy- milk, cheese, yogurt, butter, but what about small amounts in cookies, cakes, bread, and even in my veggie burgers? Really, what I want to know is am I in denial thinking I can do anything but basically becoming a vegan, and get relief from symptoms? (Already a vegetarian who eats dairy and eggs). Well, any stories of life experience would be helpful. I am just learning how to COPE with all of this, and am having trouble basically "dying" to these things that cause me pain. But if the folks out there who are more experienced in this symptom control suggest going close to vegan, I will just have to have a ceremony and say goodbye to tea and all dairy. Bless you all.
