Hi, I recently made a dish using rice noodles and followed the instructions however they came out really sticky and stuck together. Is this normal? Also, if it isn't, does anyone have a good recipe using rice noodles?
Thanks, Leanne

Hi, Have you tried Heather's recipe for Chargrilled Vietnamese Chicken with Rice Noodles and Lime Dipping Sauce? (p200 in Eating for IBS) It's delicious.
Also, I tip the noodles into a colander and run some tap water through them. That seems to separate them and stop them from sticking together.

Hey guys!! I just checked the board for the first time in eons (literally), so am trying to play quick catch up....as to that recipe for rice noodles that I promised, I will definitely post that soon...its not really a complicated recipe, but it will help with the method/ preparation, which I know is the hardest part! As for the stickiness, I still have problems at times dealing with this!! But as a rule, I always soak the noodles in water to get them soft(let it soak for about 15-20 mins), but afterwards drain THOROUGHLY -- it seems that the more water left in the noodles, the stickier it gets. I even let it sit to dry sometimes. And my boyfriend's mom (who makes the most delicious, non-sticky rice noodle dishes ever) told me once to add oil to the noodles before you cook (very little, a teaspoon or so) and mix it around. This seems to help with the stickiness.
As for the recipe, I will post it soon, I promise! Peace to all... -Chemegurrl
