This looks easy and safe! It seems like a waste of egg yolks though...I cook mine and give them to the dogs!

Ingredients

1 cup minus 2 tablespoons cake flour
1 1/2 cups superfine granulated sugar
2 tablespoons cocoa powder
1 1/4 cups egg whites (about 10 large egg whites) at room temperature
1 teaspoon vanilla extract
1 1/4 teaspoons cream of tartar
1/4 teaspoon salt
2 - oranges, cut into segments
6 ounces bottled Chocolate Sauce

Preparation - Estimated cooking time: 1 hour and 20 minutes -
1 For the Angel Cake:
2 Preheat the oven to 350°F.
3 Sift the flour twice with the cocoa powder and 1/2 cup of the sugar.
4 With an electric mixer on high speed, beat the egg whites, cream of tartar and salt until soft peaks form when the mixer is removed from the batter.
5 Add half of the remaining sugar and beat for 1 minute. Add the remaining sugar, 2 tablespoons at a time, beating after each addition.
6 Stir in the vanilla.
7 Fold the flour and sugar mixture into the egg whites, 1/4 cup at a time, until just incorporated.
8 Put the batter in an ungreased 10" tube pan and bake until the cake is light golden brown and springy to the touch, about 1 hour. Invert the pan and let the cake cool completely before removing from the pan.
9 Place 1 slice of Chocolate Angel Cake on each of 6 plates. Spoon Chocolate Sauce on the side of the cake. Arrange the orange segments like a fan to the side of the sauce.

I think I'll try Egg Beaters instead of the egg whites though!

Rachel T I think you have to use whites to make it whip up. And Rachel K I hope your dogs don't get heart disease! LOL. It sounds yummy. I have occasional chocolate cravings so this is great but I think I'll use mandarin oranges or raspberries. Thanks!

I obviously missed that one!! Kind of tells you how today is going. It still sounds yummy, although I can't tolerate egg whites at all, so maybe I'll skip making it myself!

Did you know that Egg Beaters are egg whites? Just wondering since you said you were going to use them, but say you can't tolerate egg whites.

If egg beaters are whites, then why are they yellow, and can you make them stiff like egg whites??

Well, I double-checked my pkg, and it says under ingredients egg whites 99%, then less than 1% of other stuff, including color, so maybe they color them yellow to make us think we're eating whole eggs, and subconsciously we'll think they taste good?

There is another product called All Whites. I haven't used them in awhile, but I remember the pkg said something about they don't whip up well, but they sell another egg white product that should be used for whipping. I could never find it in the store, and I can't remember the name of it.

Sorry if that wasn't much help. I just didn't want you to eat the Egg Beaters and have them cause you problems if you can't tolerate egg whites.

Yeah, I'm pretty sure they just color the Egg Beaters to make them look more egg-like.

thanks!!! I was wondering why I had a problem with the egg beaters as well as the whites. Do the egg white substitutes have any whites in them at all?? This was mentioned to me before, but I thought that since "whites" was in the name, that I wouldn't be able to use them. Are they only to be used in recipes that call for egg whites??

Thanks again for your suggestions!
