I just got my new Cooking Light and it had this IBS safe salad recipe. I haven't made it yet of course.
Green Papaya Salad (Goi Du Du) 1/2c fresh lime juice 1/4c sugar 3T fish sauce 4c peeled, julienne cut green papaya or green mango (about 3 papaya) 3c matchstick cut carrots 2 thai chilies seeded and thinly sliced 2/3c chopped cilantro (of course I'll use thai basil or mint and basil) 1/4c chopped peanuts
Combine first 3 ingred. stir with whisk. Add next 3 ingred. toss. Let stand 20 minutes. Sprinkle with cilantro and peanuts. 6 servings 1c each. 150 cal. 20% from fat 3.3 grams fat They say you can add shredded chicken or chopped cooked shrimp if desired.
-------------------- IBS-A for 20 years with terrible bloating and gas. On the diet since April 2004. Remember this from Heather's information pages:
"You absolutely must eat insoluble fiber foods, and as much as safely possible, but within the IBS dietary guidelines. Treat insoluble fiber foods with suitable caution, and you'll be able to enjoy a wide variety of them, in very healthy quantities, without problem." Please eat IF foods!
