Darn Good Blueberry Muffins

1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup Soy Garden, melted
1 egg
1/3 cup Silk vanilla soy milk
2 Tablespoons Silk soy creamer (regular flavor)
1 Tablespoon Vanilla
1 1/4 cups fresh blueberries

1. Mix dry and wet ingredients in seperate bowls.
2. Fold wet ingredients into dry ingredients and stir until well-mixed.
3. Pour into greased muffin cups, utilizing 8 of the cups. Bake at 400 degrees F for 21 to 25 minutes. If you make 12 small muffins, cook for less time (16-20 minutes).

You can definitely cut the amount of berries to 2/3 to 3/4 c if berries are difficult for you to "stomache."

... after they sit in the fridge a while! just had one cold -- about a week old -- and it is great! for some reason, these are very IBS-C compatable.

I don't have soy creamer - can I just use 2T more soy milk?

ETA: I tried it with this substitution and they were still DELICIOUS! I didn't notice any difference without the creamer. Excellent recipe!

Theres another one on ehere thats mine and it doesn't take soy creamer just milk of choice! There wonderful! do a search for them. hth

Very Simple Blueberry Muffins
1 1/2 cups flour
1/2 cup sugar
1 teaspoon salt
2 teaspoons baking powder
3/4 cup almond, soy, rice milk (i use almond)
1/4 cup canola oil
1 cup frozen blueberries
preheat oven to 400 place spray muffin pan with cooking spray.
Combine flour, sugar, salt, and baking powder, togther in a mixing bowl. Add milk of choice and oil mix.
Fold in blueberries (if using frozen do not thaw first)
pour into baking cups and bake 25-30 mints.
Makes 8 muffins

I'm really trying to cut out all oil..can I use applesauce instead? what would happen if instead of cups if I poured it into a heart shaped cake pan,or just a glass pan,or even a bread pan?

the pans would be fine. I would leave the oil it isn't that much between 8 muffins and you need some fat in you. You need some fat to help move things along. These have never bother me.You can try the applesauce and see if it works. I can't do apple sauce so i don't know. good luck though there great. My husbands love it everytime I make these!
