what to take to picnic

Hi All,
I am trying to decide what I can take to a picnic tom. I am already taking a blueberry cobbler,but know that most of the food will prob. be salads like pasta,and potato and slaw,etc.and chips. Needless to say I want to take some thing I can eat safely.Not willing to chance the mayo or oil affects in those other salads.Anyone have any ideas? Thanks. Suzy

Kree's Ranch Dressing to the Rescue new

Suzy, do you like Ranch dressing? Kree has a recipe in here for home made Ranch dressing that is FABULOUS! Hubby always asks me to make it -- in fact, I have to double the recipe because we have it every night.

Although Kree's recipe calls for low-fat mayo, I use fat-free. Normally I don't like fat-free because it tastes a little like cardboard (not that I would know what that tastes like, you understand), but this recipe is INCREDIBLE, and the fat-free mayo works great!

You could make some chicken herb tortellini (refrigerated section of the supermarket) and toss them in with some salad greens and Kree's Ranch dressing. FABULOUS!

Thanks for the plug, Bev! I never thought of using that dressing with tortellini.

Su, will they be grilling at the picnic? Because you could always bring along your own veggie burger or soy dog and ask them to grill that up for you instead. I did that last week at my family's fourth of july picnic and it worked out great. Also, you could bring your own pasta or potato salad... just use low-fat or FF mayo and if you use hard boiled eggs use just the whites. Finally, grabbing a bag of Baked Lays for yourself would be as easy solution. I hope you enjoy the picnic!

Hey Bev,
I think I'll try the tortellini...is it a cold dish? Also is there another kind of tortellini w/out meat that is good?
I'm going to try making Kree's dressing too. Thanks for the ideas. I don't want tom. to ruin my good feeling streak.

Thanks Kree,I forgot about the meat issue.
It's been too long since I went to a picnic.
Love those baked Lays too.
Even tho. I was asked to bring dessert,it would be smart to bring my own pasta salad.I wonder if it will hurt my IbS if I include sweet red peppers,sweet pickles and or celery.It will be surrounded by pasta.Wouldn't that make it okay?

There are other tortellinis stuffed with dead pig (ew) and animal fat (cheese); the only IBS-safe ones I could find were the chicken herb, and even they contain some percentage of chicken fat.

Yes, you can serve them cold; in fact, mine are cold when I put them in the salad greens. However, after boiling them, you need to add a dressing of some kind to keep them from sticking (it's pasta). A fat-free Italian salad dressing would work great, and you can doctor it up with some fresh basil (oooooh yummy!) and maybe even fresh garlic. A pesto sauce would be incredible!

Oh! And don't forget the soy parmesan to sprinkle on the top. Yummmmmmm......

I always include one or two types of raw veggies in my pasta salads and they've never bothered me!

Hey Bevrs,
I hunted for the tortellini yesterday at Food Lion and they didn't have any at all. G uess I'll have to go to a bigger store like Martin's or Walmart. Are these chicken herb kind a specific brand?

I added carrots and red pepper and celery,but I put them in w/the pasta as it cooked for the last few minutes.Thought that might help me. Do you now if tomatoes are a problem,uncooked w/skin? I'd like to rim the bowl w/tomatoes.

Buitoni is the brand. I get it at Safeway. There's a refrigerated pasta section where all the other dry pasta and tomato sauces are located, and you find all the fresh packaged raviolis and linguini and tortllini there. Buitoni is the main brand for all the refrigerated fresh pastas.

Actually, you probably would have better luck if you went to a specialty deli, like an Italian deli. In California it was Petrini's. Some deli sandwich shops might have it also.

You should be able to find it at a big food store, like Safeway or Albertson's. Up here we have Haggen's, it's like an upscale version of Safeway. I'm not familiar with Food Lion or Martin's.

You might also find it elsewhere in the store. No two grocery stores I go in ever seem to have it in the same place. If you don't have a "refrigerated pasta section" (we don't), try looking for it near the deli, in produce, or by the cheeses and tortillas. Yep, I've found them there, too. Ask someone at the deli counter where they're hiding the fresh pasta, if you want to save yourself a little time.

I agree with Bev, btw - Buitoni pasta, if you can find it, is totally worth the search!
