Banana-Strawberry Tofu Sherbet (Makes 5-6 servings)
I made this for dessert tonight and it was soooo fruity and refreshing! And it's low-fat, too!
Ingredients: 1 package soft tofu or silken tofu (I used one 12.3 oz package Mori-Nu extra firm silken) 2 ripe bananas, peeled and cut into 1 inch chunks 3 Tablespoons thawed frozen orange juice concentrate (I used an orange-tangerine blend) 1 Tablespoon vanilla 2 cups strawberries, rinsed and hulled 1/4 cup honey (or more to taste)
1. Drain tofu in a colander for about 5 minutes, then pat dry with paper towels. 2. In a blender or food processor, combine tofu, bananas, orange juice concentrate, vanilla, strawberries and 4 Tbsp honey; whirl until very smooth. 3. Taste; add more honey if desired. 4. Cover and chill until cold, about 1 hour. 5. Pour tofu mixture into an ice cream maker (1 Qt capacity or larger). 6. Freeze according to manufacturer's directions until dasher is hard to turn or machine stops. 7. Serve, or cover and freeze until firm, at least 3 hours.
