Another recipe from my sister.
1 can tuna 1 egg substitute 1/2 cup dried bread crumbs 2 tbsp chopped onion 2 tbsp chopped almonds (she sometimes omits these) 3 tbsp fat free mayo 1/2 tsp poultry seasoning 1 tsp mustard 1/2 cup crushed cornflakes 2 tbsp IBS safe margarine melted
Combine all the ingredients together except the cornflakes and the margarine. Mix well. Shape into balls 1". Dip in margarine, then in crumbs. Bake 425 10 minutes.

It was a few weeks back but I kept forgetting to post. Anyway, they tasted fantastic -- except that when I finished mixing up everything, there was NO way these could be shaped into balls! So the tuna glop got thrown into a dish and baked instead, and it became Very Flat Tuna Loaf.
I'm not sure what went wrong. I omitted the almonds, but the recipe mentions these being omitted as well. The tuna was drained really well, too.
Oh, well, it still tasted good! And because I couldn't roll them into balls, I saved on the fat/calories from 2 T margarine.
