Sauteed Summer Vegetables

it's Farmers Market time !!!
1 tbs IBS safe margarine 1/2 onion, chopped fine 3 yellow squash or zucchine, cut in 1" cubes 1 sweet green pepper, diced 1 cup corn 1 tomato, seeded and diced 1/2 tsp dried oregano 1/4 tsp garlic powder hot pepper sauce to taste 1 tbsp soy parmesan
In non stick skillet over medium heat, melt the margarine.Add the onion and saute for 3 minutes. Add the squash or zucchini, peppers,corn,tomatoes,oregano,garlic powder and hot pepper sauce. Cook stirring frequently till veggies are tender-crisp about 5-10 minutes. sprinkle with cheese.

I hope these veggies are ok to use I found this recipe and it looks good I am sure it can be altered.

Hi Shirl. That looks great! Just one comment... a lot of people (including me) can't tolerate kernal corn at all. Have you made this recipe yourself, and do you think it would work with peas instead?

kree, I have made this but it has been some time and I would experminet with the veggies I do not see why peas would not be good, I wondered about the corn myself
