Ginger spiced carrots

1 tbsp Ibs safe margarine 4 cups sliced carrots 2 tsp lemon juice 2 tsp grated lemon zest 1 tsp fresh grated ginger
Over medium heat, melt the margarine in a large skillet. Add the carrots, lemon juice,zest,and ginger. Stir to combine. Reduce heat to low. Cover and saute for about 20 minutes until tender, stirring often and add water if needed.

I have a recipe very similar to this from Gourmet magazine but it has loads of butter and it uses baby carrots and no lemon. It is delicious. I was thinking of making it with less butter sometime. Now you have put a good recipe here for it. Thanks.
