Simple side dishes could be cooked chopped spinach or zucchini squash or carrots all with a little salt and a good quality extra virgin olive oil.
Baked or boiled potatoes, mash with salt and olive oil.

Near East Rice Pilafs are good - can add finely diced carrots for extra color and texture. Thinly sliced potatoes with tiny bits of margarine, salt, pepper, and onion powder layered in a baking dish is good and safe if you keep margarine minimal. I usually make fairly plain veggies because casseroles tend to have something dairy in them. Grilled vegetables are SOO good, I think. You can marinate them in a vinagrette salad dressing for 10-15 minutes before putting them on the grill (skewer them or put on grill rack for veggies or fish). Zucchini, yellow squash, red or green (or yellow) peppers, mushrooms, new potatoes and eggplant all work well. Hope this gives you some ideas.
