I've found that using some seasoned rice vinegar and some garlic powder makes for yummy pasta. Or instead of garlic powder, toasted sesame seeds and grated soy parmesan are also yummy. Hope you find something that you find something that's yummy for you as well!

One of my mom's favorite things to do is saute up some fresh broccoli, fresh carrots, and cubed chicken breast with onion and garlic, and toss it with pasta & diced fresh tomato (if you can tolerate it). She goes fairly heavy with the olive oil, but I've done it with a tablespoon or less, and you could even use cooking spray and a little water instead. (And, of course, if broccoli isn't something you can eat, substitute accordingly... zucchini would be tasty!)
My faster & simpler - and probably a little more IBS safe - version is an onion or 2, a little garlic, and a big package of fresh mushrooms, sliced... sauteed with cooking spray, no oil, season w/ salt & pepper. Sprinkled with some (soy) parmesan, it's not only good on pasta, but it's REALLY good on spaghetti squash.
If you can handle a bit of olive oil, a friend of mine just tosses her pasta with enough oil to keep it from sticking and a good handful of chopped fresh herbs - parsley, basil, oregano, whatever.
I know these aren't sauces, but I thought I'd throw 'em in.
