Zest of lemon

I am new to the message board and it has been a long time since I have cooked but I am attempting to make the Lemon Rice Pudding and it is calling for Zest of 1 lemon. What is that? When it comes to cooking, Miss Suzy Homemaker I'm not. Any help would be appreciated.

Zest of lemon is when you grate the lemon skin into tiny shredds. You can use a cheese grater that has small to medium holes in it. Don't use the large ones. Or you can find a zester in the kitchen tools section of the grocery store.

I was wondering if the zest was IBS-D safe. I imagine it is in small amounts and with soluble fiber, like in lemon muffins for example.
