Can I eat these (my favorite cookies)?

I know these have margarine, but if you get a very low dairy margarine and think how many cookies 4T. makes will it be okay? They are delicious and low-fat. One of my very best recipes from Cooking Light magazine (an excellent source for low-fat recipes).
*Icebox Cookies*

Plain:
1c. flour
1/4t. baking soda
1/8t. salt
4T. stick margarine, softened
2/3c. sugar
1t. vanilla extract
1 large egg white

Combine dry ingredients in bowl, set aside. In large mixing bowl beat margarine until light and fluffy, gradually add sugar, mix well. Add vanilla and egg white, beat well. Add flour mixture, beat carefully. Turn dough out onto wax paper, shape into 6 inch log. Freeze at least 3 hours. Preheat oven to 350º. Cut log into very thin slices (24) with a very sharp knife, pastry scraper or dental floss. Bake for 10 minutes on sheets with cooking spray. For soft cookies about 9 minutes, for crispy cookies about 11 minutes. Cool on racks. Dough can be left in freezer and slices can be sneaked off raw, as desired. Dough can also be stored in freezer for about a month and baked whenever.

Peanut Butter:
1c. flour
1/4t. baking soda
1/8t. salt
3T. margarine
2T. chunky P.B.
1/2c. packed brown sugar
1/4c. sugar
1t. vanilla
1 egg white

Chocolate:
3/4c. flour
1/4c. cocoa
the rest the same as plain

Does the magazine give you the percentage of fat? Do you know how to calculate it from the content listing?

Total grams of fat per serving multiplied by 9 (no. of calories in 1 g/fat), divided by total calories per serving = percentage of fat per serving.

As long as it's below 25%, you're good to go.

To me the plain and chocolate versions appear to be pretty close to 25% fat... maybe slightly over. I'd probably do it. The PB cookies, on the other hand, might be a bit high in fat when you factor in the chunky PB with the nuts.

They are all 31% fat. 2 grams per cookie and about 60 calories. They make delicious ice cream sandwiches too. Well the problem with them is not too much fat in a couple cookies but that you cannot eat less than 10 cookies at a time. Maybe I won't make these unless my willpower improves!

Yeah - 31% fat is too high. Should be 20 - 25% tops. Sounds good though.

hmm, could you replace maybe half the marg with something else without altering the taste too much but to make the fat % lower?

That's a good idea but it's really hard to do that with cookies without altering the texture too much.
