Lemon Raspberry Jumbo Muffins Taste of home 2000
2 Cups flour 1 cup sugar 3 tsp. baking powder 4 egg whites 1 cup half-and-half cream YIKES!!!! 1/2 cup oil 1 tsp. lemon extract 1 cup raspberries
In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, combine the eggs, cream, oil and extract. Stir into dry ingredients just until moistened. Fold in raspberries. Gill greased jumbo muffin cups two-thirds full. Bake at 400 for 22-25 minutes or until toothpick comes out clean.

Hi Barb! Wow do these sound yummy and they shouldn't be hard to fix at all. I would just sub soy or rice milk for the cream and use half oil and half unsweetened applesauce. My only concern would be all the seeds in the raspberries. I don't know how others do with them, but even in muffins and things they bother me sometimes. If they're a problem for you maybe you could use blueberries or something with less seeds instead. Otherwise you should be set!

Thanks Kree. I didn't know if soy milk can be subt. for cream. Thanks for the tip about the raspberries - the seeds never occured to me. Blueberries sound like a great idea!!!

One of my cookbooks says you can replace cream with evaporated skim milk. The book also gave the ratio to make your own. I've made it with the soy. Here's the link.
