Simple as pie, uh, soup! Crock pot recipe for Tess!

Now, my crock pot is pretty small, and makes about 4 bowls of soup, so depending on your's you may need to alter this recipe. Also, the heat is on low.
Laura's Cozy Veggie Vegetable Soup
1 large potato (diced) 1 can diced tomatoes 1 small bag of baby carrots (chopped) 1 small zuccini (sliced) 1 carton of vegetable broth 1 tablspoon garlic 1 bay leaf salt and pepper to taste
french bread for serving, DO NOT PUT IN SOUP!
Chop all vegetables the night before into soup proportions. The next morning put all ingedients into slow cooker (between 8 and 9am) Turn on slow cooker, come home around six, and enjoy the fruits of your, uh, labor.
This soup is great because the slow cooking makes all of the vegetables really soft and the french bread is great for dunking!

Okay, this one's going on the shopping list . Well, first I need to clean my dorm room, so I can REACH my refrigerator, so I can CLEAN my refrigerator, so I can use up what's already IN my refrigerator. Hmm...I think I'll be having canned soup for supper, 'cause I don't feel like cleaning . But next week, I swear, I'll get down the slow cooker.

This sounds really good. Too bad my kids, especially the older one, won't eat tomatoes, zucchini (one of my favorites), or carrots. I am beginning to love soup for two reasons. One, it is sooo cold out here and two, it is an easy lunch for a few days. Thank you.

powder? Minced fresh?
Anyone tried this without garlic, making it safer?

I think she meant minced fresh but you can use garlic powder or minced dried too, just adjust the amount according to the instruction on the side of the pack.
I haven't made this but make similar soups myself.
You could definitely make it without the garlic, I love to include a small amount of curry powder or garam masala to give soups or stews a lift. If your chicken broth is a tasty one you shouldn't lose much by leaving out the garlic at all. (except the garlicky taste)
