Baked Potatoe Toppings

I eat alot of baked potatoes because they are so easy and fast. I am a little board with them though. Right now I just put Smart Balance butter and salt on them. They don't taste much like butter or anything.

I need suggestions for toppings so I can contiue to eat baked potatoes with out being so board.

Ketchup always goes with potatoes, so I like it on my baked spuds. This is an especially good option if you are ever on the road and forced to eat at a fast food place. I alwasy order a grilled chicken sandwich with no lettuce, tomatoes, or sauce, and a baked potato, plain. I put ketchup on the potato and fat free italian dressing on the chicken.
Well that's a ton more information than you asked for, isn't it? Sorry!
Other possibilities: soy sour cream or plain soy yogurt, fat free non-dairy salad dressing, bacos (did you know they don't have any actual meat in them?!) .... the list goes on, just use your imagination!

The mild kind does not bother me.... just the "basic" kind. But, Heather does have a recipe in her book too, I think it is called Mango Salsa.... where you puree the tomatoes. You could do the same with any salsa.... just throw it in the food processor or blender. If the acid bothers your tummy then add a touch of sugar to neutralize it.
