Hi everybody!
My vegetarian (not vegan) pal is coming over for our barbecue tomorrow night and I'd like to treat her right. Does anyone have a really super non-meat recipe for something on a grill? I can't go experimenting now - I need something tried & true! I really value everybody's advice here. I know I can trust you for some great ideas!

Hi Sperry! I've made this one quite a few times and it's always really tasty!
Grilled Zucchini and Yellow Squash (Makes 4-6 servings)
Ingredients: 2 small potatoes, thinly sliced 1-2 medium zucchini, thinly sliced 1-2 medium squash, thinly sliced 1 medium onion, thinly sliced 2 Tablespoons fat-free zesty Italian dressing (it has to be zesty!) 1/4 teaspoon italian seasonings (optional) salt and pepper 2 ice cubes 2 Tablespoons soy margarine
1. Preheat grill for 10 minutes. 2. Arrange potatoes, zucchini, and squash, alternating each on 24x18 inch double thickness of heavy-duty aluminum foil. 3. Place onion rings over the top of vegetables. 4. Sprinkle Zesty Italian dressing over the top. 5. Sprinkle with salt, pepper and Italian seasoning (if using). 6. Slice the margarine into thin slices and lay over the top. 7. Add ice cubes. 8. Wrap tightly (a drugstore wrap). 9. Cook at Medium with hood closed until vegetables are tender, 20 to 25 minutes, turning package on its side half-way through cooking.

She can have normal salad dressing, so I think I'll splurge on that.
