I can't seem to find on the net any recipes for the OLD fashioned date filled oatmeal bars. Some of you may know those as being a holiday bar cookie, but for me it brings back memories of my mom making them throughout the year. I have recipes for them, yes, but they ALL call for way to much fat (butter), 3/4 to 1 cup, to be put in with the oat/flour mixture, that you divide and pat half into the pan and then add the cooked date (or other fruit, like apple) filling then pat the rest of the oat mixture on top and bake. My thinking is that if you reduce the fat to 1/4 cup it may not stick or be really dry. If you add applesauce as a fat sub--- to mushy. Would an egg white possibly work? Who knows. The only recipes I've found so far are for date bar cookies, where all the ingredients are mixed all together not the layered one I'm wanting .....
Soooo, Kree? Anyone? Got any ideas or recipes you've adapted?
Thanks heaps......... Kandee
