Sugar cookie question

I have a sugar cookie recipe that I LOVE (well used to anyways) and in it is: 1 cup shortening, 2 eggs and one cup milk. I know I could substitute rice milk but is there anything you can do for shortening and eggs?

Abby, in place of the shortening and eggs you could use soy margarine and egg whites. BUT... considering that it contains 1 cup of shortening, it's probably going to be extremely high in fat and therefore not safe anyway. It's almost impossible to adapt sugar cookie recipes too, because it just messes up the consistency if you try subbing applesauce in place of any of the shortening. So except for the occassional cheat you may need to give up that recipe. I hate to say it, because I know how much I hated giving up mine!

If you're interested in trying a safer recipe here's one that joanmarie shared. I haven't tried it yet but it looks good! And it's a LOT lower in fat:
