Kandee, I like the way you think. It's substitution, not deprivation, right?? I didn't realize it was just the fat in the yolks that was bad. I just assumed it was some kind of protein like it is in meats, dairy, etc. That's good to know. I may have to try your deviled "egg" idea if I start feeling desperate. I'm actually not as senesative to fats as some people (although I try to follow the 25% rule almost all the time) so I bet it would be fine for me, too.

Well, I may be totally wrong on this, since we know that protein CAN be an IBS trigger, but if we can eat chicken/turkey/beans/egg whites but not beef/pork that means that not all protein is created equal. I don't know, but maybe Heather has something in her first year book about this, and may mention egg yolk.......but I'd suspect that it's the fat mainly that is the culprit.

You may want to try making an egg salad sandwich using only half of the cooked egg yolk and all the egg white and see how you do. You have the soluble fiber bread to stabilize you, and there again I think that is the key..........with the deviled eggs too.......have some bread or crackers first.

Oh Kree, I've been having to eat wheat free so long that if there is a great sub out there I'll find it!!! I'm now making my own GF bread that tastes every bit as good as the wheat kind........it just doesn't get very high......

Yep, no "Deprivation Duty" for this chick!!! Hehe..

I would love to see more of your recipes; they really sound great. The hummus sounds really good. We just had a restaurant called Aladdin open up. The owners are from Jordan, but I've been scared to try much because I am not sure of the ingredients.

Yeah! Good attitude, Kandee! I'm so impressed with how well you've adapted to your GF diet. I admit it, I hope I never have to join you in that one... but if I do I know who I'll turn to for advice!

I'm lucky, I've never been a big fan of cooked egg yolks... so I'd probably prefer my egg salad without them anyway!

Hey Kandee,
I just saw this post from a million years ago and I actually have an answer for you about how to poach eggbeaters. I missed my poached eggs too, like crazy. I don't buy eggbeaters -- I get Eggology 100% eggwhites. www.eggology.com That website has so many great tips. One of them said to use a clean, dry, coffee mug, and pour the eggwhites into the bottom of it. Then put it in the microwave for about 70 seconds and viola! Poached eggwhites. Plus, they are the perfect size for a little mcmuffin!
