Recipes for crimini mushrooms?

Hi, picked up some crimini mushrooms on sale this week and now don't know what to do with them! Any IBS safe recipe ideas? I saw one on 30-minute meals for a frittata that looked good, but used whole eggs. Can you make a fritata with just egg whites?

I'm not a mushroom person, so I don't have any recipes to suggest! But I can tell you that a frittata should work great with egg whites. You can really sub them in anything calling for whole eggs, including omelettes, etc.!

Thanks, I'll have to try it! Would I have to use twice as many egg whites as whole eggs?

Yep, you use 2 egg whites in place of every egg.

This works fine with fresh tuna steaks, not bad at all with calamari steaks, my favorite is halibut, but any fresh fish will do. Haven't tried it with salmon.
CASTILLIAN FISH SUPPER:
SAUCE: 1 tbsp olive oil 1 tsp minced fresh garlic 1/4 cup coarsely chopped kalamata olives 3/4 cup sliced crimini mushrooms 1/2 cup chianti (or other red wine) 1 can crushed tomatoes 1 tbsp sugar 2 tbsp fresh basil 1 tbsp fresh oregano 1 pinch crushed fennel seeds
4 fish filets, 6-8 oz. each 1/2 cup flour mixed with 1/2 cup dry fine breadcrumbs Egg wash: 1/2 cup eggs or egg substitute whisked with 2 cups milk 2 cups very fine chopped pine nuts (or pecans or almonds) 2 tbsp olive oil
In a large heavy skillet, heat the oil, garlic, olives, and mushrooms for 2 minutes. Pour in the chianti and stir quickly, then add the tomatoes and adjust heat to a simmer. Add sugar, basil, oregano, and fennel, then salt and pepper to taste. Simmer gently at least 10 minutes.
Coat fish filets in flour and crumbs, then dip them into the egg mixture, then coat them with nuts. Heat olive oil in heavy skillet, add fish filets, and saute over medium heat till lightly browned. Serve with warm sauce over the filets.
