Okay, I used to love stir fry with tofu and I've just got some smoked tofu and I don't know what to put with it that's safe. Zucchini would probably be okay wouldn't it? And how about bean sprouts? Anyone know if water chesnuts and bamboo shoots are okay? Any other suggestions very welcome.

Zucchini should be fine, especially if you remove the seeds. As for those Chinese veggies like bean sprouts and water chestnuts, I think they're a little riskier. But I still have them as long as I make sure I eat a lot of rice first and eat them in moderation!

I use zucchini, water chestnuts, carrot, onion, and sometimes bok choy (not much & and sliced very thin). I think chestnuts are listed as soluble fiber on Heather's list and I always assumed that meant water chestnuts. I'm not a mushroom fan but that might be another idea.
