Late/Quick Dinner Ideas?

I need help!
On Thursday nights, I go to my yoga class straight from work, which means I'm not able to eat dinner until around 8 p.m., which is really late for me. (I usually eat around 6). I'm STARVING when I get home, but I'm afraid to eat anything heavy that close to bed and I don't have any time to really cook anything.
Any suggestions for what I can eat?

UGH! I have some occasional late nights during the week like that, too.
To cover that (and sometimes a quick lunch, too), I make a pot of homemade soup at the beginning of the week. If I feel like I need more than just a bowl of soup to make the hungries go away, I make a sandwich or have a rice cake with almond butter (can't do peanuts!).
Hope this helps. I know how you feel. The last thing you want to do after a day like that is cook and make a mess of the kitchen!

I try to make extra food and eat the leftovers for lunches or a quick dinner. I almost always have a few things in the freezer that I can take out and microwave if necessary. I get an almost panicky feeling if I need to eat and I don't have anything planned. It's like I am wiped out and I can't think and I need food NOW!
Also turkey or tuna sandwiches work well for a quick idea.
One last thought... this soup is IBS safe and quick to make just add water and simmer.

Whew! I'm so glad I'm not the only one who plans out meals. I plan out my meals every week because I hate having to make extra trips to the grocery store for odds and ends.
I think the sandwich/soup idea will work just fine. Thanks!

I make scrambled egg beaters in the microwave and when I take them out mix about 1 TBLS. soy sour cream through them that and sourdough toast with soy butter make a nice late dinner for my husband.

What about noodles? I get noodle cakes that only take about 3 minutes to cook in boiling water. Then I add soy sauce - quick and ultra easy!
