I'm not very adventurous so after finding the chocolate mint cake and loving it, I didn't experiment with any other dessert for quite some time. However, lately I thought it might be nice to try something else so I just made the carrot cake. It's delicious but instead of the orange glaze I used the remainder of the crushed pineapple with some confectioner's sugar and a T. of frozen orange juice and put that on top of the cake.
