Where do you find "Soy Cheddar Cheese" and "Soy Parmesan" as listed in the Mac and Cheese recipe? Is it neccessary to go to a health food store? Does it really taste close to the original? How well does it melt? Thanks, Amy

Hi Amy! I'm able to find soy cheeses in the natural foods section of my local supermarket, but a lot of people do have to go to health food stores. As for tasting like real cheese, if you find a good brand they really do! The soy parmesan is especially convincing! As for melting, I've noticed that the cheddar melts a little more slowly than dairy cheese, but it's pretty comparable. Unless you get the kind without casein... then it doesn't melt too well.
Here are my favorite brands of soy cheese... just so you know!
Soymage Vegan Parmesan (it's in the bottom right of the picture) Galaxy Food's Veggie Shreds (Cheddar)

.. try looking in the produce isle! That's where I find my soy cheese in my regular grocery market.
