Potato Bread (Bread Machine)

Potato Bread (Bread Machine)
(Makes one 1 1/2 lb loaf)

I finally got a bread machine for Easter, and this is my favorite loaf I've made so far!

Ingredients:
3/4 cup soy milk
1/2 cup water
2 Tablespoons canola oil
1 1/2 teaspoons salt
3 cups bread flour
1/2 cup instant potato flakes
1 Tablespoon sugar
1/4 teaspoon ground white pepper (optional-i omit)
2 teaspoons active dry yeast

1. Add all ingredients to bread machine in order listed, or as recommended by your bread machine.
2. Select desired setting and press start.
3. I make this using the basic cycle and the lightest crust setting.

You're welcome, Shell! I was so happy when I found this one too, because I adore potato bread and hadn't been able to find any in the store that didn't contain milk. Yay for bread machines!

I love potato bread also and haven't been able to find any without milk either. Potato bread makes the best grilled cheese sandwiches!!! I can't wait to make this (and the grilled soy cheese - with tomato soup of course! )

OK - I got it going in the breadmaker now. Three hours from now I hope to have yummy potato bread!

I did only have 1 cup of bread flour so I used 2 cups all-purpose, and I had the rapid rise dry yeast. Do you think it will work okay? What's the deal with yeasts anyway? How do you know when to use regular highly active or rapid rise?

Well, hopefully it will come out good though.

You're asking the wrong person, Mags... I'm really new to this whole yeast bread thing so I just do what the bread machine recipes tell me to do, lol. I've actually been bugging the people at Recipezaar with my bread machine questions! I really hope it comes out okay for you though because it's sooo good.

Mags, this'll crack ya up, I can't REMEMBER what the deal is with rapid rise yeast and regular yeast, but I do remember that years ago when I learned the difference I swore I'd never buy or use rapid-rise yeast. LOL

regular flour: shouldn't make much difference. You'll have slightly better texture in the finished product with bread flour (higher protein).

white pepper: hmmm that's interesting. This would be good with a teaspoon of cardamom added. Or use half bread flour and half rye flour and substitute beer for the water and add either dill or cardamom and you'd have a DANDY rye bread.

Way to go, Kree, this looks like a GREAT recipe!!!!

Kelly - I thought I didn't like rapid either before, but that's all they had at my store last time I needed some, so I got that.

Oh well - we'll see how it turns out. Less than 2 hrs to go!

Kree, this recipe reminds me of a bread I used to make OFTEN a long time ago ...... it was just about like this recipe, but maybe 1/3 of the flour was whole wheat flour and it used honey instead of sugar. I quit using whole wheat flour (it's caca in bread because it goes rancid so fast because of the kernel oil) but you can use bran buds cereal instead. Like 1/4 of the flour or maybe 1/3 of the flour should be bran buds instead of flour. And be generous with the honey. Way yum.
