Crispy Potato Wedges

CRISPY POTATO WEDGES
Serves 4

4 med russet potatoes, cut into large wedges
cooking spray (flavored or plain)
1/4 tsp freshly ground black pepper
1/8 tsp salt
2 cloves garlic, minced (opt)

1. Place potatoes in large bowl. Add cold water to cover. Let stand for 15 min.

2. Preheat oven to 425. Spray a nonstick baking sheet with veg cooking spray. Set aside.

3. Drain potatoes in colander. Spread on a double layer of paper towels. Cover with a second layer of paper towels. Press down on the towels to dry potatoes.

4. Transfer potatoes to a clean large bowl. Spray with cooking spray, s&p. toss gently to combine. Arrange seasoned potatoes in single layer on prepared baking sheets.

5. Bake potatoes for 20 minutes. Using a spatula, turn potatoes, sprinkle w/garlic. Bake until golden about 20 min turning baking sheet after 10 min for even browning. Serve immed with ketchup on the side.

Variation: For a sweeter flavor, use sweet potatoes instead of russets. Proceed as directly in steps 1, 2 and 3. Add 1/2 tsp of paprika when tossing potatoes with spices in step 4. Bake as directed in step 5.

Crinkle cut fries are especially crispy. Use a ripple-edged cutter to cut potatoes into 1/4" thick slices. Then cut crosswise into fries. Proceed as directed.

Now THIS sounds easy!! And still would not add extra calories unless you did add the garlic, but that is only like 4 calories per serving..... 1 medium potato is only 120 calories!!

WWWWWWoooooooohhhhhhoooooooo.... lets all do the potato dance.....

Low carb adkins...yeah...WHATEVER!!

I made these today

I did not add the garlic, but I did add Johnny's at the same time as the salt & pepper

I HIGHLY RECOMMEND THIS TECHNIQUE!!

Better then any ole fries that is for sure!!

Shell, fries made on the Foreman grill are awesome, too! This recipe came in the cookbook with my grill. You cut the potato into fries, drizzle them with a little oil and lemon juice, and wait for the grill to heat up. Then you sprinkle them with season salt and pepper and put them on the grill for about 10 minutes. SO GOOD! They remind me of seasoned fries without the guilt.

YUM...... do you think it would work with (i.e. Pam non-stick spray) instead of oil?

Probably, but it's not a lot of oil. We're talking maybe a tablespoon for two 'taters. I think it just helps to soften the potatoes a bit and help them get pretty grill marks.

If a tablespoon sounds like too much oil for you, try it with the Pam and let me know how it goes!

Do you use veg or olive? Either way that is about 120 calories for a tablespoon. I'll try the Pam 1st. Two taters? (you mean two whole potatoes?)

I use olive oil, and yes, "two 'taters" is cutesy-speak for "two potatoes." LOL That would be more than enough fries for the two of you.

If you soak the potatoes in water with about a teaspoon of sugar, the sugar will draw out some of the water in the potatoes so the fries get really crispy in the oven rather than steam and get mushy. A great trick I learned from my Weight watchers cookbook. It works great. My oven fries even compare in taste to the fried ones without all the fat, at least to me.
