and I know this sounds weird for an IBS recipe, but they turned out very greasy. I thought maybe I'd gotten a little gung-ho with the cooking spray, so I made them again the next day with very very very minimal spray, and they were a little better but not much. I also made sure to dry them well. not sure what happened here ...

Sorry I forgot to mention the time, fifteen minutes is all I soak them for.
And dry them between some paper towels before I season them.
