Question About Fresh Ginger Root

How would you properly store fresh ginger root after you break off what you need? How long should it keep?

Put it in the vegetable bin in the fridge. It should keep in there about as long as a carrot would, maybe longer. Better to NOT put it in a plastic bag in the fridge (same for all vegetables in there).

Ginger in the bath: If you cut off a couple little slices of the ginger root (like carrot pennies) and put them in a big bowl or basin with hot water, it makes a nice footbath. Sit with your feet in it and you will get warm all over. Good for colds, flu, fever. You can put the ginger in the bathtub and get in it -- but TAKE IT EASY and watch out on this, it's easy to overdo it if you're not used to it!!

You can also freeze it and then just pull it out and grate it when recipes call for it! It lasts practically forever in the freezer.
