Pear Spiced Bread

Pear Spice Bread

1/2 cup canola oil
1/2 cup applesauce
2 cups granulated sugar
3/4 cup eggbeaters (equivalent to 3 eggs)
2 1/2 cups pears - peeled, cored and chopped
1 cup chopped pecans or walnuts
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Directions:
Preheat oven to 350 degrees F. Lightly grease two 8x4 inch loaf pans.

In large mixing bowl combine oil, applesauce, sugar and eggs, beat well. Stir in pears, pecans and vanilla.

In another bowl, sift flour, baking soda, baking powder, salt, cinnamon and nutmeg, combined well.

Stir dry ingredients into the pear mixture; mix well.

Pour batter into prepared loaf pans.

Bake in preheated oven for 60 minutes, until a toothpick inserted into center of a loaf comes out clean.

Allow loaves to cool in pans for 10 minutes before moving to a wire rack to cool completely.

Freezes well if double wrapped.
Makes 2 - 8x4 inch loaves (20 servings)

Shell's : YUM... I love how you get that little bite of pear that is still in the same shape as before it was baked...but it is nice and soft and juicy!! Very moist...

I haven't tried your spiced pear recipe, but I intend to experiment a little using Heather's brown sugar banana bread. I am going to substitute the three cups of mashed bananas for three cups of pureed pears. I have already bought three large baby food jars of pureed pear sauce. This will save me the bother of peeling, coring and chopping the pears. I am also going to omit the sugar in the recipe since, for me, it is verbotem!

Yes, I used 2 fresh pears which = 2 cups... so if you really wanted 2-1/2 cups then you would need a 3rd pear......

Looks and sounds like this would be delicious.
How important is the size of the baking pans?
I don't have any loaf pans at the moment but have tube/angel cake pan. Do you think it would work?
Looking forward to seeing pictures of the gathering.

Just wanted to come on and give my own review, as we got to eat it last night at the dinner in Seattle:
The bread was SO GOOD! I never really liked any of these kinda breads (banana breads and all that kinda stuff) before, but everything I have tried of Shell's has been awesome! The pear pieces were so nice and moist, the whole bread was such a good flavour!
I give it two thumbs up!!

Ooh, and Adrian liked it too! He's already eaten most of what we took home from dinner and keeps saying how good it is!

I think it would be fine if you put the WHOLE mix into your tube/angel pan....test with toothpick at 60 mins, you might need to cook a little longer, but then again maybe not. Let us know if you make it how it turns out.
Looking forward to seeing pictures of the gathering. We have LOTS of pictures and they will be posted on the "Get Together" board later this week, maybe Tues.

I've tried making Pear bread before and was thrown off by the grain that I felt in my mouth kind of like sand in the bread. Does this recpie cause that??

I did not notice it being grainy at all. It was very moist and I will be waiting for Shell to make it again soon, hope I do not have to wait for another gathering to get some.

This was delicious!! I did not add any nuts because I was afraid they would do a number on me. I loved all the many pieces of pears in the bread, made it very moist. This is definitely a keeper! Thanks for sharing.

For some reason, my stomach doesn't like egg beaters...do you think it would would with egg whites? How many should I use?

Hi everyone,

This is a definite competitor for my favourite recipe from this website (Thank you very much, Shell Marr!).
I have made it a few times, and it's always turned out great.
I was browing through the boards and saw this and thought since I am all snowed in today, I might as well do some baking!
I managed to get all the ingredients --except the pears! I am using canned pears, I will let you know how it turns out!

I just wanted to bump this and let all of the new members know how awesome this bread is! I made it over the weekend and can't stop eating it!!!

Do you think canned pears would work? I made it with fresh pears, and it was very yummy, but fresh pears are so expensive! (at least here, anyway). I wonder if canned pears would make it too wet or gummy, even if they are really well drained...?
