Kahlua Chocolate Bread Pudding - IN THE OVEN!

My Mother In-law made this at Christmas time and I asked her to give me the recipe so I could make it safe for ME So, she mailed me a copy last week.

Kahlua Chocolate Bread Pudding

1 (1-pound) loaf French or Italian bread, cubed (I left the crust on & used Grandcentral Bakery's Como made fresh daily bread)
1-1/2 cups vanilla soy or rice milk
1-1/2 cups chocolate soy or rice milk
1/4 cup heavy cream (mix 1/4 cup soy or rice milk with 1-1/2 tbs. powdered soy milk)
1/2 cup coffee flavored liqueur (I used Kahlua, homemade even that we gave for Christmas gifts)
1 cup sugar
1 cup packed light brown sugar
1/4 cup cocoa powder
1 tablespoon vanilla extract
2 teaspoons almond extract
1 1/2 teaspoon cinnamon
1-1/2 cups eggbeaters, lightly beaten (equivalent of 6 eggs)
8 ounces semisweet chocolate, grated(optional) (I chopped up generic brand chips non-dairy)

Preheat oven to 325 degrees F.
Lightly grease a 13 by 9-inch baking dish and place the bread in the dish. In a large bowl, whisk together the milk, cream, and liqueur. Using another bowl, combine the sugar, brown sugar, and cocoa powder and mix well. Add the sugar mixture to the milk mixture and mix well. Add the vanilla and almond extract, and cinnamon to the beaten eggs. Combine the egg mixture to the milk mixture and mix well.
Stir the grated chocolate into the mixture. Pour the mixture over the cubed bread in the pan. Let the mixture stand, stirring occasionally for approximately 20 minutes or until bread absorbs most of the milk mixture. Bake pudding for 1 hour or until set. Check pudding by inserting a knife through the middle and it should come out clean.

Serve the soy pudding or soy ice cream warm, or refrigerate and serve chilled.... you know what you can and can't handle

It smells SSSSSSOOOOOOOOOOO good in here.... I can't wait to dig in.... gonna wait just a few minute

I'll have to get my recipe out for the Kahlua... but pretty much....(sugar, water, vodka, instant coffee, vanilla bean) I'll post it later..... makes GREAT gifts!

It really IS yummy!! And if your worried about the choc chips... just leave them out....I think it would be just as good without.

hehehe....I'll have to dig out my Christmas stuff.... But I will soon. Just FYI it has to age for 30 days before you can drink/cook with it. I made mine in Nov03 and JUST used it for the 1st time to make this.

HOMEMADE Khalua Recipe new

Here's what's cookin. ....KHALUA
From the kitchen of ....Shell Marr

Ingredients:
4 cups water
2oz instant coffee ( 2/3 cup dry )
4 cups sugar
2 vanilla beans ( these are expensive..I think I got 2 for about $12.00? )
1/5 ( fifth of ) Vodka (approximately 25 ounces)

Direction:
Fill pan with 4 cups water, bring to a boil, add sugar, bring back to a boil and cook for 5 minutes, stir occasionally.

While still hot; add coffee. Allow to cool.

Pour into gallon jug (I used glass w/srew top..you might want to make sure you have a small funnel to make it easier)

Split vanilla beans down the center but don't cut all the way through. Add vanilla beans and 1/5 of vodka to the jug.

For best results let stand "mature" 4-5 weeks in a dark place...shaking every couple of days.


These make great Christmas gifts!

You must have been reading my mind when you brought this one back up to the top of the Board. I spent about 10 minutes this afternoon starting at my sister-in-law's Kahlua Cake recipe, wondering if it could be made IBS-safe. I think the answer is "yes" - I'll post it once I try it - but in the meantime, your Kahlua Bread Pudding sounds fabulous and just the thing for me chocolate-Kahlua yen.

Oh my god, this sounds heavenly! I've never used powdered soy milk - how does that work? Godiva and Frangelico... help me out here. I'm assuming Godiva is chocolate flavored? And what is Frangelico? This sounds like something you'd get at a fancy restaurant. This really excites me...

Just seen your recipe for Homemade Khalua. Although I know what vodka is, I have never heard of Khalua. What is it used for? I am ignorant about it. Jenny
