Help with Heather's Zucchini Bread...

Hello everyone,
I have been trying to make some of the recipes that I have found on here and/or in Heather's book. I made the zucchini bread but found that it was very dry. I looked back in the posts and found one that said it should be very moist...what am I doing wrong? I followed the directions carefully so I am not sure what to do next! Any suggestions?

Did you forget an ingredient? I just did that last weekend with Heather's to-die-for gingerbread, and I was so mad, because I had to throw it away. Anyway, wondering if you forgot something. The only other thing I can think of is you overbaked it.

It really is delicious though, so please don't give up on the recipe!

I don't think I forgot anything, but I am going to try it again...since everyone says it is so good...my oven is very tempermental..so maybe i did overbake it! Thanks!

Did you stir it a lot? That can cause trouble. Also how long after it was cooled down did you wait to tightly cover it up?

Those are my two thoughts. I have made this before, the first time it turned out great. The second time it was dry. I waited to long after it cooled before I covered it.

I'm going to make the Lemon bread today in her eating for cookbook. I love this one! My 6 year old boy also LOVES it!!

I make this all the time and it has always been very moist. I think it kept me alive when I was first trying to get myself stabilized. I usually bring a big thick slice with me to work and have it for a morning snack.

Also I usually substitute half of the oil with applesauce just to keep the fat content down.

I made this, and it was VERY moist. Did you bake it too long? At too high temperature? You didn't substitute anything, did you? Heather's got it figured out just right; I wouldn't sub anything.

However, I do have one tip; BE SURE TO SIFT THE DRY INGREDIENTS FIRST! I skipped that part because I'm lazy. And I sure paid the price for it! I could actually taste the baking powder/soda in parts of the bread. EW.

It's a great recipe; just keep at it, and check your oven temp. Good luck.

Thanks Guys! I think maybe I baked it too long..I am not sure or maybe I didn't cover it quick enough..I will try again maybe this week!! I will let u know how it comes out!

Hi again,

I just made the zucchini bread this afternoon and I realized that I have a note on the recipe. If I cook two mini loaves I only put them in for about 40 minutes. If I make one large loaf I cook it for 1 hour (sometimes 5-10 minutes longer).

I don't know if that helps - hope so.
