Yep. Believe it or not. These are absolutely DELICIOUS, easy to make, and quick out of the oven. They even satisfy my donut cravings. You can glaze them (see recipe below) but they are delicious plain. However -- you have to have a donut pan.

CAKE DONUTS

2 cups flour
3/4 cups sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
3/4 cups soy milk
1/2 cup Egg Beaters
1 teaspoon vanilla
1 tablespon canola oil

Preheat oven to 325. Lightly spray donut pan(s) with Pam. Combine dry ingredients; set aside. In mixing bowl, beat together the remaining ingredients until well blended. Add dry ingredients and blend well. Fill each donut hole 2/3 full. Bake 8 minutes or until tops spring back when lightly touched. Cool.

GLAZE

1 cup confectioner's sugar
2 tablespoons HOT water
Optional: sprinkles, nuts, shaved chocolate, cinnamon, sugar

Remove donuts from pan(s) and dip into glaze. Decorate with sprinkles, nuts, chocolate -- OR dip donuts into cinnamon and sugar instead of the glaze.

Makes 12 donuts (I made only 10)

The original recipe calls for 2 whole eggs. That equals 1/2 cup of Egg Beaters. No Eggs Beaters? Okay, how about 3 or 4 egg whites (3 if the eggs are large, 4 if they're small)?

My mom makes spudnuts every halloween!! They are sooooo yummy but you know the drill.....they are full of FAT!!!!! So I'm going to try this out for sure!!! YUMMY!!!

Oooohhh - I am so excited! I love cake donuts but hate the greasiness (and dairy) - I can't wait to make these! My son loves donuts too and I say NO so often because of the high fat - he'll be excited to try them too. Thanks, Bev!!

Since your in Washington... I know you can find a See Donut Pans At Walgreens They do have them there for $19.99.

Liz, check the posts below from me that are headed, "Donut Pan for Steph" or "Donut Pan for Kree". I believe the pans in Bakers Catalogue are $5 cheaper than Walgreens (although you'd have to pay shipping & handling charges).

Darn, I wish I'd found this recipe earlier. I used one from a different site and it had 2 TBSP baking powder which seemed way too much. I did it anyway, trusting the recipe, and they have an icky bitter flavor. Maybe I will try a half batch of these to see if they come out any better. The other ones are okay, but kinda icky.
