Are there any weight watcher members who can help with a recipe?

A long while back I had a recipe which I had gotten from weight watchers. It was for a pumpkin dessert - it might have been called pumpkin mousse. It was basically like a pumpkin pie without the crust. Does anyone remember it and happen to have the recipe?

I'll have a look in my book when get home. It's probably not IBS safe though - most WW desserts aren't (too much empthasis on sweeteners and creme fraiche!).

Pumpkin Mousse


1 POINT
per serving

Ingredients:

1/2 cup water
1 Tbs. unflavored powdered gelatin
2/3 cup nonfat milk powder
1/2 cup canned cooked pumpkin
2 Tbs. sugar
1/2 tsp. vanilla extract
1/8 tsp. cinnamon
1/8 tsp. allspice
6 ice cubes


Instructions:

Pour water into small saucepan. Sprinkle gelatin over top and let stand 5 minutes. Place mixture over medium heat. Cook 2 minutes stirring constantly until gelatin is dissolved. Transfer gelatin to blender. Add remaining ingredients, except ice cubes. Process mixture until smooth. Add one ice cube at a time, blending well after each ice cube is added. Divide mixture into individual dessert bowls. Cover and refrigerate at least 2 hours before serving.


Yield: 4 servings
1 POINT per serving

Per serving: calories 83, fat 0.1g, 1% calories from fat, cholesterol 2mg, protein 5.9g, carbohydrates 14.9g, fiber 0.9g, sugar 13.3g, sodium 70mg

Thanks, Shirl. I appreciate your checking for me. This recipe sounds really good. I don't remember it being the one I was thinking of. I seem to remember the use of pumpkin pie spice and that it was 4 points a serving. I'm definately going to try the one you sent me though.

you can check further but I went on the site and that's the one that came up maybe I am wrong Kree caught it so maybe I have no clue but when I put it in the search that is what came up. sorry but I thought it was the one.

Kree was talking about her own recipe that wasn't from a Weight Watchers site. Yours definitely is and I checked too, but couldn't find any.

Hi I've just tried the Pumpkin Mouse. I made it without sugar (I'm allergic) just adding extra spices and topping it with whip cream. It turned out really well. The closest thing to pumpkin pie I've had in a long time.

Ok, so I'm months late responding, but I just saw this post. I think this might be the one you're referring to. I love it, and at 4 points for the entire pie, it's guiltless!

Crustless Pumpkin Pie

1 15 oz. can pumpkin
1/2 cup eggbeaters
1 1/2 cup skim milk
3/4 cup Splenda
1/2 tsp. salt
1 to 1 1/2 tsp. pumpkin pie spice

Beat til smooth. Put in pie pan sprayed with Pam. Bake at 400 degrees for 15 minutes. Then at 350 degrees for 45-50 minutes. (til knife inserted in center comes out clean). Serve with FF Cool Whip. Delicious! Only 4 points for entire pie.

Here is another one. (I haven't tried this.)

Pumpkin Fluff

1 lb. can pumpkin
2 small pkgs. ff instant pudding mix (such as choc. fudge)
1 cup skim milk

Mix together and chill. 4 servings at 1 pt each.
